Ingredients You'll Need:

    Raw Jackfruit, Turmeric Powder, Salt, Black Pepper, Ginger, Onions, Tomatoes, Green Chilli, Garlic, Mustard Oil, Cumin Seeds, Black Cardamom, Green Cardamom, Cloves, Cinnamon, Bay Leaf, Chilli Flakes, Coriander Powder, Kashmiri Red Chilli, Kasturi Methi, Red Chilli Powder, Coriander Leaves

    Step-by-Step Instructions:

    - Take 500g raw jackfruit, peeled and cubed
    - Take 2 glass of water in a cooker and heat it
    - Add 1 tsps Turmeric Powder
    - Add 1 tsps Salt 
    - Add 1/2 tsps Black Pepper
    - Now add peeled and cubed raw jackfruit
    - Now add 1 tsps grated ginger
    - Mix it well and stir well
    - Take 1 whistle on high flame to cook it
    - Now take 2 big chopped Onions, 2 big chopped Tomatoes, 1 green chilli, 5 peeled ginger pieces, 5 peeled garlic cloves 
    - Now take out cooked jackfruit pieces and filter it to remove water (store this filter water)
    - Now put aside filtered cooked jackfruit pieces
    - Now take 1 big tsps oil in a cooker pan and leave it to heat
    - Now add cooked jackfruit pieces in it and fry it till turn brownish on low flame
    - Now take 1 tsps oil in a cooker pan and leave it to heat
    - Now take 1/2 tsps Jeera (Cumin seeds), 1 Badi Ilaichi (Black Cardamom), 2 Chhoti Ilaichi (Green Cardamom), 5 Kaali Mirch (Black pepper), 5 lavang (cloves), 1 small piece dalchini (Cinnamon), 3 tej patta (Bay Leaf)
    - Add all spices in heated oil
    - Add peeled garlic in it
    - Add chopped onion in it
    - Add chopped green chilli
    - Add chopped ginger chilli
    - Add chopped green coriander stems
    - Mix it well and cook for some time
    - Add 2 tsps Turmeric Powder
    - Add 2 tsps Corinader Powder
    - Add 1 tsps Chilli flakes
    - Add 1 tsps Kashmiri Red Chilli
    - Now Add 2 big chopped Tomatoes
    - Mix it well and cook for sometimes
    - Now add 1 tsps salt
    - Now add 2 tsps filtered water get after jackfruit boiling steps
    - Take 1 whistle on medium flame to cook it
    - Now messed up the mixture properly to make puree
    - Now add 1 tsps Kasturi Methi
    - Now add 1 tsps Red Chilli
    - Mix it well and stir well
    - Finally, add previously cooked jackfruits pieces
    - Add little water and cook for a whistle in cooker
    - Garnish it by chopped green coriander leaves
    - Now delicious Kathal Ki Sabji is ready to serve

    • 2 medium tomatoes, finely chopped or pureed
    • 1 inch ginger, grated
    • 4 cloves garlic, minced
    • 2 green chilies, slit (adjust to taste)
    • 1 teaspoon turmeric powder
    • 1 teaspoon red chili powder
    • 2 teaspoons coriander powder
    • 1/2 teaspoon garam masala   
    • 1/4 teaspoon asafoetida (hing)
    • 2 tablespoons vegetable oil
    • Fresh coriander leaves, chopped (for garnish)   
    • Salt to taste
    • Water as needed.

    For Extra Informations:
    1. Preparing the Jackfruit:

      • Peel the raw jackfruit and cut it into medium-sized cubes.
      • To prevent stickiness, apply a little oil to your hands while cutting.   
      • Boil the jackfruit cubes in salted water for 5-7 minutes until slightly tender. Drain and set aside.
    2. Making the Base Gravy:

      • Heat vegetable oil in a heavy-bottomed pan or kadhai.   
      • Add asafoetida (hing) and chopped onions. Sauté until golden brown.
      • Add grated ginger, minced garlic, and slit green chilies. Sauté for a minute until fragrant.
      • Add the chopped tomatoes or tomato puree and cook until the oil separates from the mixture.
      • Add the turmeric powder, red chili powder, and coriander powder. Mix well and cook for a minute.
    3. Cooking the Kathal:

      • Add the boiled jackfruit cubes to the pan and mix well with the spice mixture.
      • Add salt to taste and mix thoroughly.
      • Add a little water, just enough to cover the jackfruit.

      • Add the Garam masala and mix well.
